The fish is sold the day it is caught. It is fished in Dieppe in the morning and sold in Paris in the afternoon (twice a week only). It is sushi grade fish. The Place de la Bourse’s farmer’s market is probably the smallest one in Paris but definitely a major one for the quality of its fish stand. You can call A la Pêcherie Dieppoise , an artisan fishery, ahead of time for special orders.
